This course is suitable for students aged 19 and over.

This course will allow you to become more adventurous and experiment using exceptional ingredients that will result in creating fantastic classical, mouth-watering French dishes.

The course will provide a strong foundation to build your culinary flair and provide tips to ensure making food is a fun and enjoyable past time.

You will explore quick and versatile methods in preparing and cooking food. This course will provide you with a small collection of French recipes that you can recreate at home for special occasions or just a well-earned treat.

Start Date and Duration

This course is due to start on Tuesday 7th January 2025. You will attend college on Tuesday evening from 6.00pm – 9.00pm, for four weeks.

This course will take place at our Main Campus, Huyton, Liverpool, L36 3SD.

Course Content

This course will allow you to explore various ingredients and develop basic craft skills in French classical cookery.

The programme will encourage you to develop creative culinary ideas and show you the art of presenting food to impress. Not only will the programme provide you with some new skills in culinary techniques but will also present you with a small compendium of recipes that you are bound to enjoy.

Delivered on an integrated basis to give greater interest to the learner the course will explore the tools required for specific culinary tasks, the selection of ingredients and the methods required in the preparation, cooking and finishing of those ingredients to form French gourmet dishes. Some of these dishes may include:

  • Boeuf bourguignon
  • Sole a la Normande
  • Poulet Sauté Bressane
  • Flamiche
  • Tarte Tatin

Course Participants will develop awareness of health and safety aspects in relation to the preparation of food, food and safety awareness, practical knife skills, stove control and whilst learning logical and coherent methods for producing interesting classical French Dishes.

You are likely to prepare and cook starters, main courses and sweets. The selection of foods used to produce these French dishes will vary from those that are used on a daily basis to those that are described as specialist products. Meat, fish, vegetables, sauces, fruit, nuts and pulses are likely to find their way into the dishes that you will have fun creating.

Assessment Methods

There is no formal assessment. You will be given feedback based on your progress with suggestions and guidance for areas for improvement.

As with all our leisure courses, the main emphasis is to come and enjoy!

Entry Requirements

There are no formal entry requirements. The course is suitable for all levels of ability.

You will need to wear strong, flat sensible shoes and bring along an apron, tea towel, and an oven glove.

Please bring along a container to take what you have made home with you.

Course Cost

You may be eligible for funding if you have not recently participated in a similar programme, or received any other recent government funded training.

There are a number of fee options for this course including:

  • If you are unemployed – FREE
  • If you are employed – £30
  • If you are not eligible for funding – £120

The course price is inclusive of all the ingredients that you will need for each session.

Future Progression Opportunities

You may wish to progress onto an accredited qualification in this subject, which will allow you to practice your skills in the industry.
